Lemon Parm Shrimp Orzo

Lemon Parm Shrimp Orzo

Whip up this pasta for a fancy and easy meal in!

Ingredients (serves 2)
  • 3/4 cup orzo

  • 2 TB olive oil

  • 1/2 lb shrimp, raw & deveined

  • 1/2 onion, diced

  • 1/4 cup white wine

  • 1 cup chicken broth

  • 1/2 cup parmesan, freshly grated

  • 2 big handfuls spinach

  • 1 handful cherry tomatoes, sliced in half

  • 1 tsp lemon pepper

  • 1 TB lemon juice

Instructions
  1. Cook orzo according to package instructions. When done, drizzle with a little olive oil so the noodles don't clump together.

  2. Sprinkle lemon pepper over shrimp. Heat up olive oil in a pan and saute the shrimp until just barely done.

  3. Remove the shrimp and add onion and white wine to the pan. Cook onion until translucent.

  4. Add chicken broth and orzo to pan with onion. Mix until combined. Add parmesan and stir.

  5. Add spinach and mix until leaves are deflated.

  6. Serve orzo into bowls. Top with shrimp, cherry tomatoes, and squeeze lemon juice on top. Sprinkle more parmesan if desired.

  7. Enjoy!
