Caramello Popcorn

Caramello Popcorn

A recipe adapted from a childhood favorite of my husband's, this snack is perfect for a fun movie night in with the family!

Ingredients
  • 1/2 cup butter

  • 1/2 cup brown sugar

  • 1 bag mini marshmellows

  • 1/2 tsp vanilla

  • 1/2 cup popcorn kernels

  • 2 TB avocado oil (or any alternate)

  • Coarse gray salt

Instructions
  1. Make popcorn: Turn a large pot on medium-high heat. Add oil with 3 popcorn kernels and wait until the kernels pop before adding the rest. Shake the pot back and forth constantly until kernels are popped. Set aside in a large bowl.

  2. Melt butter, brown sugar, and 1/2 bag of marshmellows in the microwave (1 minute at a time). Add vanilla.

  3. Pour mixture over popcorn and add the rest of marshmellows. Mix until combined.

  4. Serve with a sprinkling of coarse gray salt.
